100 grams butter
1 pinch salt
1 organic Orange (zest and juice)
125 grams sugar
3 eggs
1 egg yolk
60 grams Pastry flour
60 grams Chestnut flour
1 tsp cocoa powder
1 tsp Baking powder

Preparation steps

Preheat the convection oven to 180°C (approximately 350°F). Coat the Madeleine molds with butter and sprinkle with flour. Place a raspberry on each.

Melt the butter and let cool. Mix the salt, orange juice and zest, sugar, eggs, egg yolks, flour, chestnut flour, cocoa and baking powder into the butter and mix to form a smooth batter. Pour into the molds, filling 2/3 full. Bake in the preheated oven for about 10 minutes until golden brown. Remove from the oven and carefully remove from the molds. Allow to cool and serve.
