- 2 Tbsps olive oil (plus extra for baking dish)
- 4 large Tomatoes
- 11 ozs fresh Mozzarella
- 12 slices cooked Turkey (thinly sliced; may substitute sliced deli turkey)
- 2 onions (finely diced)
- 2 cloves garlic cloves (minced)
- salt
- White pepper
- 1 Tbsp fresh thyme

Preparation steps
1.
Preheat oven to 425º F / 220ºC. Grease an oven proof dish with olive oil.
2.
Cut tomatoes and cheese into 1/2 inch thick slices. Place cheese, tomato, and turkey slices into ovenproof dish in alternating layers.
3.
Combine olive oil, diced onions, garlic, salt and pepper; sprinkle over tomato, turkey and cheese.
4.
Place dish on middle rack of oven and bake for 20 minutes.
5.
Wash and dry thyme and sprinkle over the dish. Bake 5 minutes longer. Serve hot or cold.
