700 grams predominantly waxy potatoes
100 grams smoked Bacon
3 sprigs thyme
2 shallots
1 garlic clove
2 Tbsps Canola oil
125 milliliters dry white wine
salt
freshly ground peppers

150 grams Reblochon cheese
150 grams Sour cream

Preparation steps

Peel and cube the potatoes. Cube the bacon. Pluck the thyme leaves. Peel and finely dice the shallots and garlic. Saute the potatoes and bacon for 4-5 minutes, until the bacon is crispy. Mix in the shallots and saute for another 5 minutes. Mix in the thyme and garlic. Pour in the wine and simmer for 2-3 minutes. Season with salt and pepper. Remove from the heat.

Preheat the oven to 200°C (approximately 400°F). Grease 4-6 small ramekins with oil. Dice the cheese. Mix 2/3 of the cheese with the sour cream and potatoes. Spread in the ramekins and sprinkle the remaining cheese on top. Bake for about 25 minutes, until light brown. Serve immediately.
