½ cup heavy cream
1 egg yolk
kosher salt (to taste)
freshly ground Black pepper (to taste)
3 cups Yukon gold potato (peeled and thinly sliced)
3 Tbsps fresh rosemary
½ cup grated Mozzarella

Preparation steps

Preheat oven to 350º F / 180° C. In a small bowl whisk the cream, egg, salt and pepper.

Arrange 1/3 of the potatoes, slightly overlapping, in the bottom of a greased casserole dish. Sprinkle with 1/3 rosemary and 1/3 cheese. Repeat 2 more layers with remaining potato, rosemary and cheese. Pour cream mixture over layers.
3.
Bake for 35 minutes or until potatoes are cooked through and cheese is melted and golden. Let rest for 10 minutes. Serve.
