- 1 ½ cups Cornmeal
- 2 tsps Baking powder
- 1 pinch baking soda
- 1 cup all-purpose flour
- ½ cup milk
- 2 eggs (beaten)
- 11 ozs canned creamed corn
- 1 chili pepper (finely chopped)
- ¾ cup grated Cheddar cheese
- 1 Tbsp chopped thyme

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 12 hole muffin tin.
2.
Mix together the cornmeal, baking powder, bicarbonate of soda and flour in a mixing bowl.
3.
Add the milk, eggs and creamed corn and mix until well blended. Add the chillies, cheese and thyme and stir to combine.
4.
Spoon the mixture into the tins. Bake for 18-20 minutes, or until risen and cooked through. Serve warm.
