400 grams mixed Cheese (such as Gouda, Emmental, mountain cheese)
2 Apple
1 shallot
4 Pickled cucumbers
100 grams Yogurt (0.1% fat)
1 Tbsp White vinegar
1 tsp spicy Mustard
lemon juice
1 pinch sugar
salt
freshly ground, white peppers
scallions (for garnish)

Preparation steps

Remove the rind from the cheese, if necessary, and dice into small cubes. Rinse the apples (peel if you'd like), cut into quarters, remove the seeds, and dice into small pieces. Peel and finely chop the shallot. Finely dice the pickle. Mix the pickles, 1-2 tablespoons of pickle juice, the yogurt, vinegar, and mustard. Mix in the prepared vegetables, and season to taste with the lemon juice, salt, white pepper, and sugar.

Divide into bowls, garnish with the chives, and serve.
