- 14 ozs Fettuccine
- 1 onion (finely chopped)
- 1 garlic clove (finely chopped)
- 2 Tbsps olive oil
- 5 cups shiitake mushrooms (sliced)
- dry white wine
- 1 Tbsp Sage (finely chopped)
- ½ cup fresh Parmesan (grated)

Preparation steps
1.
Cook the fettuccine in boiling salt water until al dente.
2.
Fry the onion and garlic in hot oil. Add the mushrooms and fry for 3-4 min. Quench with a dash of wine and stir in the sage, pasta and a little of the water. Season with salt and ground black pepper and serve sprinkled with Parmesan.
