1 medium onion (peeled and finely chopped)
3 medium Apple (divided)
½ cup all-purpose flour
2 cups hot milk
2 cups hot, reduced-fat Chicken broth
½ tsp Dry mustard
1 ½ cups diced, sharp Cheddar cheese
½ tsp kosher salt
½ tsp freshly ground Black pepper
4 sprigs fresh thyme
crusty Bread (to serve)

Preparation steps

In a large, non-reactive, saucepan set over medium-low heat, melt the butter. Add the onions, cook until softened but not browned, about 6 to 8 minutes.

Meanwhile, peel 2 apples and cut into 1/4-inch dice. Add the diced apple and continue cooking until apples are cooked, but still slightly firm, about 8 to 10 minutes more.

Sift flour over the onion and apple mixture. Cook and stir with a wooden spoon until the mixture is lightly browned, about 4 to 5 minutes.

Gradually whisk in the hot milk, hot broth and dry mustard. Continue stirring until the soup thickens and comes to a simmer. Add the cheese and stir just until the cheese is melted. Season with salt and pepper to taste.
5.
Slice the remaining apple. Divide soup between bowls and garnish with apple slices and sprigs of thyme. Serve hot with crusty bread.
