- 700 grams carrots
- 1 small onion
- 3 Limes (juiced)
- 1 centimeter finely grated ginger
- 2 Tbsps vegetable oil
- 500 milliliters Vegetable broth
- 500 milliliters water
- salt

- Limes (for garnish)
- cilantro (for garnish)
- Sour cream (for serving)

Preparation steps

Peel the carrot and cut into small pieces.

Peel the onion and chop finely. Heat the oil in a saucepan and sauté the vegetables in it, deglaze with lime juice, add ginger and pour in broth. Let simmer in a closed pan for 15-20 minutes. Then puree and press through a fine sieve. Pour in at least 250 mL (approximately 1 cup) of water, reheat and season with salt and pepper.

Serve in small bowls. Dollop with sour cream and garnish immediately with slices of lime and cilantro.
