4 large eggs (at room temperature)
1 ⅛ cups vegetable oil
2 cups granulated sugar
2 tsps pure vanilla extract
2 cups unbleached all-purpose flour (plus extra for pan)
2 tsps Baking powder
2 tsps baking soda
1 tsp kosher salt
1 tsp ground ginger
1 tsp ground cinnamon
tsp ground cloves
½ cup Golden raisins
3 cups grated carrots
1 cup Walnut coarsely chopped (optional)
To Decorate
powdered sugar (for dusting)

Preparation steps

For Carrot Cake:

Preheat oven to 350º F / 180º C. Coat a 10-inch / 25 cm springform pan with nonstick cooking spray and dust lightly with flour.

In a large bowl, beat eggs, oil, sugar and vanilla together. In a separate bowl sift flour, baking powder, baking soda, salt and spices together. Add the raisins and toss to coat. Add the dry flour mixture to the egg mixture. Stir in the grated carrots and mix well. Fold in the chopped walnuts (if using).

Pour the batter into the prepared pan. Bake in the preheated oven for about 45 to 50 minutes, or until a cake tester or wooden toothpick inserted into the center of the cake comes out clean. Cool in the pan for 10 to 15 minutes. Release the cake from the pan let cool.

Dust with confectioners' sugar, cut and serve.
