- 2 Carp (each about 500 grams)
- salt
- freshly ground peppers
- 5 Tbsps butter
- 1 Tbsp Caraway
- 4 Saffron
- ½ tsp peppercorns
- 1 Tbsp dried Cranberry
- 1 pinch allspice
- 100 milliliters Orange juice
- 4 onions
- ½ handful parsley

Preparation steps

Preheat the oven to 180 ° C upper and lower heat.

Rinse fish thoroughly, pat dry and season with salt and pepper. Heat 3 tablespoons of butter in a small pan and cook fish for about 1-2 minutes. Deglaze pan with orange juice and add all the spices. Arrange fish in the baking dish, pour spiced butter over and bake in preheated oven at 180°C (approximately 350°F) for about 30 minutes. Baste with cooking juices occasionally. Peel onions and cut into rings. Heat remaining butter in a pan and saute onions until translucent. Rinse parsley, shake dry, chop coarsely and add to the pan in the end. Remove carp fillets from the oven and arrange on plates. Top with onions. Serve with lemon wedges and fresh baguette.
