This recipe for caramel popocorn has considerably less calories and sugar than store-bought varieties, not to mention no preservatives.

Drizzle this popcorn with some melted milk or dark chocolate for an extra sweet kick.

2 cups packed brown sugar
½ cup light corn syrup
1 tsp salt
1 tsp baking soda
½ tsp pure vanilla extract

Preparation steps

Preheat oven to 200º F. Place popped popcorn in a large bowl.

In a medium saucepan set over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly to dissolve the sugar. Boil for 4 to 5 minutes. Remove pan from heat source; stir in the baking soda and vanilla extract and stir well. Pour in a thin stream over the popcorn, gently stirring to coat.

Place the coated popcorn in two large shallow roasting pans and bake in a preheated oven, stirring every 15 minutes, for 1 hour. Spread caramel corn on waxed paper to dry and cool. Gently break apart and serve.
