- 600 grams Squid (ready to cook, cleaned)
- 3 Tbsps lemon juice
- 4 ripe Tomatoes
- 3 shallots
- 1 garlic clove
- 2 Tbsps olive oil
- 1 pinch sugar
- 1 Tbsp finely chopped Basil
- 200 milliliters dry white wine (such as Riesling)
- 2 Tbsps freshly chopped parsley
- salt
- freshly ground peppers

Preparation steps

Rinse squid and pat dry. Cut squid in narrow rings, sprinkle with lemon juice and leave to marinate for about 1 hour in the refrigerator.

Blanch tomatoes in a pot of hot water, rinse with cold water, peel, quarter, core and cut into cubes. Peel shallots and garlic and cut into cubes.

Heat oil in a saucepan and saute shallots until soft. Add tomatoes, sugar, garlic, basil, and white wine. Stir in squid along with marinade, cover pan and simmer over low heat for 35-40 minutes. Season with salt and pepper and serve immediately garnished with parsley. Serve if desired with fresh baguette.
