Preparation steps

1.

Rinse the carbon out and remove core with a sharp knife. Heat plenty of salted water and cook the cabbage about 5-8 min., so that the outer leaves are very soft and can be easily removed. Remove the midrib.

2.

Butter the pudding mold well and line with cabbage leaves.

3.

Discard the hard center pieces and finely chop the remaining cabbage.

4.

Chop lamb and bacon coarsely, place in a food processor and finely shred.

5.

Peel the ginger, chop finely and add to the meat mixture with eggs, spices and mustard. Stir into the chopped cabbage.

6.

Scoop the mixture into the lined with cabbage leaves pudding mold. Press firmly, cover with the remaining cabbage leaves and seal the mold with the lid.

7.

Place the pudding mold on an upturned saucer in a pot. Pour boiling water up to halfway and close the pot, covering the pot cover with a damp cloth. Cook on the stove over medium heat for about 1 hour.

8.

Remove the pudding from the pot. Let stand 10 min., then invert on a plate and serve.
