Buttermilk Celebration Cakes

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and place paper case in a muffin tin.
Beat the egg and add the sugar, vanilla sugar, oil, buttermilk and a pinch of salt. Mix together the flour, cornflour, lemon zest and the baking powder and fold into the buttermilk mixture.
Place spoonfuls of the mixture into the muffin cases and bake for 20-25 min.
Remove from the oven, take the muffins out of the tin and leave to cool. Serve sprinkled with icing sugar.
