- For the cupcakes
- ⅔ cup butter
- ⅔ cup superfine caster sugar
- 3 eggs (beaten)
- 1 tsp vanilla extract
- 1 cup self-rising flour (sifted)
- 1 Tbsp milk
- For the vanilla cream
- 1 ⅓ cups cream (48% fat)
- 3 Tbsps powdered sugar
- 1 tsp vanilla extract
- To decorate
- 12 soft licorice snaps
- 3 flat Licorice (each cut into 3-4 pieces)
- ½ cup red Sugar paste

Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place 12 paper cases in a bun tin.
2.
Beat the butter and sugar in a mixing bowl until light and creamy. Gradually beat in the eggs and vanilla until blended.

Sift in the flour and gently stir into the mixture with the milk, until combined.

Spoon into the paper cases and bake for about 20 minutes until risen and springy to the touch. Cool in the tin for 5 minutes then place on a wire rack to cool completely.

For the vanilla cream: whisk together all the ingredients until thick but not stiff. Spoon into a piping bag and pipe swirls on top of the cakes.
6.
Place a liquorice cylinder on top of each cake and a piece of liquorice strip on top.
7.
Roll the sugarpaste into 12 thin strips and flatten out at one end. attach to the liquorice with a dab of water, as in the photo.
