150 grams Pastry flour
150 grams cornstarch
1 tsp Baking powder
250 grams butter
5 eggs
225 grams sugar
100 grams powdered sugar

Preparation steps

Grease baking molds and sprinkle with breadcrumbs.

Rinse lemon in hot water, pat dry, grate zest and squeeze lemon juice, set aside 1-2 teaspoons of juice. Combine flour with cornstarch and baking powder in a bowl. Melt butter in a small saucepan. Break eggs into a mixing bowl, add sugar and whisk until fluffy with an electric mixer. Add lemon juice and zest. Add melted butter and flour mixture, alternating, to egg mixture and mix until smooth. Pour batter into prepared molds. Bake in preheated oven at 160°C (approximately 325°F) for about 25 minutes or until gloden brown (inserted toothpick should come out clean).

Remove from oven, let cool slightly and invert onto a wire rack, cool completely.

Whisk powdered sugar with reserved lemon juice until smooth and place into a small freezer bag. Cut off one tiny corner and decorate the edges of the cakes with the mixture. Let dry completely. Serve.
