1 kilogram mixed Tomatoes (red and yellow, various sizes)
6 Tbsps olive oil
8 thin slices Baguette
2 scoops Buffalo mozzarella (125 grams or approximately 4 ounces)
2 Tbsps white balsamic vinegar
salt
freshly ground peppers
1 pinch sugar

Preparation steps

1.

Rinse the basil and arugula, shake dry, and remove basil stems. Rinse the tomatoes. Cut the larger tomatoes into quarters, and the smaller ones in half if needed.

Heat 2 tablespoons of oil in a pan and fry the bread until crispy, then drain on paper towels. Drain the mozzarella and cut into 4 thick slices.

3.

Toss the tomatoes with the balsamic vinegar, salt, pepper, sugar and the rest of the oil, then transfer to plates. Alternate stacking the bread, cheese and tomatoes in layers to form towers, then garnish with arugula and basil and serve.
