500 grams Broccoli
100 grams starchy potatoes
1 shallot
1 garlic clove
2 Tbsps olive oil
600 milliliters Vegetable broth
2 slices white bread
2 Tbsps Sesame seeds
100 grams Crème fraiche
salt
1 Tbsp lemon juice
freshly ground peppers

Preparation steps

Rinse the broccoli and cut into small florets. Peel and dice the stem. Peel and dice the potatoes. Peel and finely chop the garlic and shallot. Saute the shallot and garlic in 1 tablespoon of oil. Add the broccoli and potatoes. Deglaze with the broth. Simmer for about 15 minutes.

Cut the bread into strips, brush with olive oil and sprinkle with sesame seeds. Press the seeds gently into the bread. Toast in a hot pan until golden brown and crispy. Remove from the pan and let cool.

Remove some of the broccoli from the soup and pour into preheated soup bowls. Puree the remaining soup. Depending on the desired consistency, let simmer or add more broth. Stir in the creme fraiche and season with salt, pepper and lemon juice. Pour into the bowls and serve with the sesame bread.
