- 200 grams Pearl barley
- 1 onion
- 1 garlic clove
- 100 grams Bacon
- 2 Tbsps vegetable oil
- 800 milliliters Beef broth
- 400 grams broad Beans
- 4 scallions
- 6 Sage
- salt

Preparation steps
1.
Soak the barley in water overnight.

Peel the onion and garlic and chop finely. Finely dice the bacon. Heat the oil in a pan, add the onion, garlic and bacon and sauté. Deglaze the pan with the broth and add the drained barley. Gently simmer for about 30 minutes.

Rinse and clean the broad beans and slice them diagonally into pieces. Rinse and clean the spring onions and slice them into rings. Add the broad beans and spring onions to the soup and let simmer for another 15 minutes. Season with salt. To serve, divide into bowls and garnish with the sage leaves.
