8 Carp (approx. 150 g each)
1 Tbsp lemon juice
2 Tbsps flour
1 ⅔ cups breadcrumbs
0.333 cup clarified butter

Preparation steps

1.
Beat the eggs in a deep bowl.
2.
Season the carp steaks with salt and ground black pepper and drizzle with the lemon juice. Coat them in flour, then egg, then breadcrumbs.
3.
Fry in a hot pan in the clarified butter for around 10 minutes until golden brown. Turn 2-3 times during cooking and baste regularly with the butter.
4.
Drain on kitchen paper and serve on a bed of parsley, if desired.
