- 400 grams Pastry flour
- 7 grams Dry yeast
- 150 grams liquid Whole Wheat Sourdough Starter (from a health food store)
- 1 tsp sugar
- 2 tsps salt
- 3 Tbsps sunflower oil
- Pastry flour (for the work surface)

Preparation steps

Mix the rye flour and the all-purpose flour in a bowl with the dry yeast. Add 175 ml (approximately 1 cup) of lukewarm water and leaven. Add the sugar, salt, 2 tablespoons of oil and just enough water (about 175 ml) (approximately 1 cup) as the dough can absorb without becoming too sticky. Knead well on a floured surface. Then, cover and leave to rest for about 1 hour.

Knead again and form into a long loaf. Place on a lined baking sheet and leave to stand, covered, for about 45 more minutes.

Preheat the oven to 200°C (approximately 400°F).

Sprinkle with the remaining oil and bake in the oven for about 1 hour. Remove and cool.
