- 21 ozs Sole fillet (skinned, ready-to-cook)
- 2 Tbsps all-purpose flour
- 2 Tbsps olive oil
- 4 green pointed pepper (sliced)
- 2 onions (sliced)
- 2 cloves garlic cloves (sliced)
- 6 Tomatoes (skinned and diced)
- 1 tsp paprika
- ground Saffron
- 1 cup dry white wine

Preparation steps
1.
Season the fish with salt and ground black pepper and dust with flour. Fry in hot oil for a few minutes then set aside.
2.
Add the peppers, onions, garlic and tomatoes to the pot and fry for around 5 minutes. Season with paprika and a pinch of saffron and deglaze with the wine.
3.
Add the tomatoes and braise on a medium heat for around 10 minutes.
4.
Add the fish to the pot, cover and cook for another 5 minutes. Season to taste and serve.
