- 2 Tbsps Oil
- 25 ozs lean Pork (cubed)
- 1 onion (chopped)
- 1 red Bell pepper (chopped)
- 8 ozs Mushrooms (sliced)
- 2 Tbsps flour
- 1 ⅓ cups white wine
- ⅔ cup pork stock
- 2 Tbsps tomato puree
- 18 ozs canned Tomatoes
- 2 tsps chopped Sage
- salt

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Heat the oil iln a flameproof casserole dish and brown the pork in batches. Remove from the dish and set aside.
3.
Add the onion, pepper and mushrooms to the dish and cook for 3 minutes until softened. Remove from the dish and set aside.
4.
Sprinkle in the flour and cook, stirring for 2 minutes. Stir in the wine and stock.
5.
Add all the ingredients to the dish and stir well.
6.
Cover and cook for about 1-1 1/2 hours until the pork is tender.
