1 kilogram Kid (goat) (cut into about 8 pieces)
salt
freshly ground pepper
1 Tbsp Pastry flour
500 grams shallots
4 garlic cloves
olive oil
250 milliliters Red wine
2 bay leaves
1 Cinnamon stick
3 cloves
1 tsp dried thyme
500 grams Tomatoes
1 Tbsp Red wine vinegar
2 Tbsps fresh thyme (chopped)

Preparation steps

1.

Season goat pieces with salt and pepper and sprinkle with flour.

2.

Peel shallots and leave whole. Peel garlic and cut into slices.

3.

Brown goat pieces on both sides in 3 tablespoons oil and remove from pan. In the same pan, sauté shallots and garlic until lightly browned.

Return goat pieces to pan and pour in half of the red wine. Add bay leaves, cinnamon stick, cloves and dried thyme to pan. Cover pan and simmer over low heat about 1 hour, occasionally adding remaining wine.

5.

Blanch, peel and quarter tomatoes, remove seeds and cut into small pieces. Stir tomato into pan with goat pieces and simmer about 30 more minutes. Stir red wine vinegar into pan juices and season with salt and pepper. Sprinkle braised goat with fresh thyme to serve.
