- ¾ cup superfine caster sugar
- ⅓ cup apple sauce
- 2 large eggs
- 1 tsp vanilla extract
- 1 large Braeburn Apple (cored and sliced)

Preparation steps
1.
Preheat the oven to 190°C (170° fan)|375F|gas 5 and line a 12-hole muffin tin with muffin cases.
2.
Combine the flour, baking powder, bicarbonate of soda, and salt in a large mixing bowl.
3.
Beat together the margarine, sugar, apple puree, eggs, and vanilla extract in a separate mixing bowl until smooth.
4.
Fold in the flour mixture until just combined. Spoon into the muffin cases and top with a slice of apple.
5.
Bake for 22 - 25 minutes until golden, risen, and springy to the touch.
6.
Remove to a wire rack to cool before serving.
