- 3 ⅓ cups floury potatoes
- 1 cup all-purpose flour
- ⅓ cup whole-grain cream of wheat (semolina)
- 1 egg
- 1 egg yolk
- Nutmeg
- For the sauce
- 1 ⅓ cups Gorgonzola (crumbled)
- ⅔ cup cream (30% fat content)
- ⅞ cup Vegetable broth

Preparation steps
1.
Boil the potatoes in salted water for approx. 30 minutes until done. Drain, peel and mash. Let cool.
2.
Add the flour, cream of wheat, egg and egg yolk to the mashed potato. Mix well and season with salt and nutmeg. Adjust the quantity of flour so the dough is not too sticky and is easy to shape.

For the sauce: Stir the gorgonzola, cream and broth in a pan over a medium heat. Season with salt and pepper and keep warm over a low heat.

Roll out the gnocchi dough on a floured surface to rolls approx. 2 cm | 1" thick. Cut into small gnocchi. The gnocchi may be decorated with patterns, using a fork.
5.
Place the gnocchi in a pan of simmering salted water and cook until they rise to the surface. Remove with a slotted spoon and drain.
6.
Stir the gnocchi into the sauce and serve, sprinkled with basil and chives.
