- 4 sheets white gelatin
- 250 milliliters Blood orange juice

- 8 Shortcrust tartlets
- 2 Blood orange
- 50 grams white Couverture
- 30 grams chopped Pistachio

Preparation steps
1.
Whisk egg yolks with sugar until very foamy. Soak gelatine in cold water. Heat 100 ml (approximately 2/5 cup) of orange juice and dissolve squeezed gelatine in it, then whisk with remaining juice. Combine with egg yolk mixture and refrigerate for 20 minutes.

When cream begins to gel, beat egg whites with 1 pinch of salt until stiff and fold into the cream.

Pour cream into a piping bag with a star tip and pipe into tartlets, refrigerate for 1 hour.

Peel oranges well, removing as much pith as possible, and slice. Melt chocolate over hot water bath. Arrange orange slices on the tartlets, garnish with chocolate and pistachios and serve.
