Preparation steps

Mix eggs and 3 yolks with rum. Add sugar and the seeds of the vanilla pods. Whisk the mass over a hot water bath until the sugar has dissolved and the mass is creamy. Then beat over cold water until creamy but not quite until stiff. Rinse berries, remove stems, puree and strain through a sieve. Stir in the cooled egg mixture.
