- 2 rosemary
- Sea salt
- ½ tsp Coriander
- ½ tsp peppercorns
- 4 Tbsps White vinegar
- 4 Tbsps grapeseed oil
- 4 Tbsps Whipped cream
- rosemary (for garnish)

Preparation steps
1.
Rinse the beets and place in a steamer. Add the rosemary and season with salt, then cover and steam over a pot of simmering water for about 40 minutes. Peel the beets and cut into large pieces or wedges.

Crush the coriander and pepper in a mortar, then mix with the vinegar, oil and salt to taste. Allow the beets to cool, then toss with the vinegarette and serve in bowls with a dollop of sour cream and garnished with rosemary.
