Preparation steps

Rinse the beets. Simmer the beets, cumin, and coriander seeds in salted water for 40 minutes, until the beets are tender. Drain the beets, peel, and cut into slices. Mix the beets with the vinegar and lemon juice. Season to taste with sugar, salt, and pepper. Let the beets cool to room temperature.

Rinse and trim the leeks, then cut into bite-sized pieces. Heat 1 tablespoon of the oil in a pan, and sauté the leeks for 2-3 minutes. Remove from the heat and let cool.

Mix the leeks, remaining oil, and sesame seeds into the beet mixture. Toss to combine, sprinkle with the chives, and serve.
