- 700 grams small Beets
- ½ stalk cinnamon
- ½ tsp fennel seeds
- ½ stalk Licorice
- salt
- 200 milliliters Apple juice
- 3 Tbsps sugar

Preparation steps

Rinse the beets, place in a small saucepan and add enough water to cover. Add the cinnamon stick, fennel seeds, licorice stick and 1/2 teaspoon salt. Bring to the boil, then cover and simmer over medium heat for about 40-50 minutes.

Remove beets, peel and let cool, then cut into very small cubes. Puree with apple juice and honey. Pour the mixture in a shallow dish and freeze in freezer about 5 hours. Stir every 30 minutes well, until it forms small ice crystals. After 2 hours, fold in the stiffly beaten egg whites. Let the sorbet thaw for a few minutes before serving, then fill into a piping bag with a star tip and then pipe into serving glasses. Garnish to taste with apple slices and beet leaves. Serve cold.
