- 3 cooked Beets (peeled; chilled and sliced into rounds)
- 1 red, eating Apple (washed; cored and thinly sliced into rounds)
- 1 Tbsp freshly squeezed lemon juice
- 2 balls Buffalo mozzarella (drained and sliced)
- 1 Tbsp apple cider vinegar
- 4 Tbsps olive oil
- coarse Sea salt (to taste)
- freshly ground Black pepper (to taste)
- Arugula (for garnish)

Preparation steps
1.
Sprinkle the apple slices with lemon juice to prevent browning. On a serving platter, layer the stacks as follows; chilled beets, followed by an apple slice and a slice of mozzarella cheese.

In a small bowl, whisk the apple cider vinegar and olive oil together and drizzle over stacks. Season to taste with salt and pepper and garnish with arugula. Serve.
