4 slices Beef roulade (160 g each)
2 Tbsps hot Mustard
8 rashers smoked Bacon
8 small gherkins (halved lengthways)
1 onion (sliced)
1 Tbsp all-purpose flour
2 Tbsps vegetable oil
1 Tbsp tomato puree
1 Tbsp paprika
cup dry Port wine
1 ⅔ cups Meat stock
2 carrots (diced)
2 shallots (sliced)
1 stick Celery (diced)
1 Leek (chopped)

Preparation steps

Heat the oven to 160°C (140°C in a fan oven), 325°F, gas 3.

Gently tenderise the meat, season with salt and ground black pepper and spread with mustard.

Place two rashers of bacon, two gherkins and some onion slices on top of each slice of meat and roll up tightly. Secure tightly with kitchen twine. Dust with flour and fry in a pot until brown. Stir in the tomato purée and the paprika and deglaze with the Port and the stock.
4.
Add the vegetables to the pot and braise in the oven for around 90 minutes turning the roulade every so often.
5.
At the end of the cooking time, season the sauce with salt and ground black pepper. Remove the twine before serving and serve with mashed potatoes and broccoli.
