- 2 Tbsps butter
- 2 Tbsps olive oil
- 2 Beef fillet 225-275 g (8-10 oz) each, approx. 5cm (2"") thick
- kosher salt
- Black pepper (freshly ground)
- 2 slices Bacon (uncooked)
Preparation steps

Preheat oven to 450°F

In a medium oven-proof skillet add butter and olive oil and place over medium-high heat.

Season both sides of steaks with salt and pepper, to taste. Wrap bacon around outside of each filet and secure with toothpicks.
4.
When skillet has heated and butter has melted, add steak to skillet and sear on both sides for about 1 minute per side.
5.
Remove skillet from stove top and place in oven to finish cooking steak. For medium rare, keep in oven for 7-10 minutes. Remove from oven and allow to rest a few minutes before serving.
6.
Sauteed mushrooms and collard greens make a great accompaniment.
