4 Beef roulade (about 150-200 grams or 6 ounces)
salt
freshly ground peppers
3 Tbsps vegetable oil
1 Tbsp Mustard (spicy)
150 grams Crème fraiche
1 tsp Pastry flour
3 Zucchini
4 carrots
4 slices Bacon
200 grams shallots
¼ l beer (dark)
¼ l Beef broth
sauce thickener (dark)
salt
peppers
1 scallion

Preparation steps

Peel and julienne carrots. Rinse and thinly slice zucchini. Peel shallots. Rinse beef, pat dry and season with salt and pepper, then cover with a slice of bacon. Stir creme fraiche, mustard and flour until smooth, then season with salt and pepper and spread into bacon. Top beef with carrots and zucchini. Roll up beef and secure with wooden skewers.

Heat oil in a casserole dish and sear beef on all sides. Remove from pan, add shallots and deglaze with beer and liquor. Cover and simmer for about 45 minutes over low heat. Remove beef from pan, then thicken pan juices with cornstarch and water. Season with salt and pepper.

Plate beef and garnish with sliced scallions.

Serve with boiled potatoes or noodles, as desired.
