- 9 ozs medium Rice noodles
- 21 ozs Sirloin steak (thinly sliced)
- 1 Tbsp Oil
- salt
- peppers
- 1 Tbsp butter
- 1 cup dried chinese mushroom (soaked in warm water for 30 minutes)
- ½ chinese Cabbage (shredded)
- 3 carrots (cut into thin strips)
- 1 cup chopped, unsalted Peanuts
- For the dressing
- 6 Tbsps thai, sweet Chili sauce
- 2 Limes (juice)
- 2 Tbsps Fish sauce

Preparation steps
1.
Put the noodles in a large bowl and pour boiling water over. Leave until soft, then drain and rinse well with cold water.
2.
Heat a frying pan until very hot. Brush the steak with oil and season with salt and pepper. Cook for 1-2 minutes. Remove from the pan and set aside.
3.
Heat the butter in the pan. Drain the mushrooms and add to the pan. Cook for a few minutes until golden. Drain on kitchen paper and set aside.
4.
For the dressing: whisk together all the ingredients.
5.
Toss the drained noodles, steak and vegetables with the dressing. Place on serving plates and scatter with peanuts.
