- For the beef
- 600 grams Beef fillet
- salt
- freshly ground Black pepper
- For the pistou
- 125 grams fresh, baby Spinach
- 1 garlic clove
- 2 tsps Caper
- salt
- freshly ground peppers
- 50 grams Parmesan (freshly grated)
- 50 grams Pine nuts
- 100 milliliters olive oil

Preparation steps
1.
For the beef: rinse and pat dry beef. If necessary, score fat layer several times. Season meat with salt and pepper. Place beef, fat side up, onto an oven rack and place dripping pan underneath. Roast in preheated oven at 240°C (approximately 465°F) for about 10 minutes. Reduce oven temperature to 220°C (approximately 425°F) and roast for 30 minutes more. Remove from the oven and let rest for 15 minutes, wrapped in foil.

For the pistou: rinse and spin dry spinach. Peel garlic and chop coarsely. Drain capers.

Puree spinach, garlic, capers, Parmesan and pine nuts in a blender. Gradually add oil and season with salt and pepper.
4.
Cut meat into slices and serve with pistou.
