- 200 grams beef marrow
- 3 eggs
- 200 grams White bread crumbs
- 2 tsps freshly chopped parsley
- 1 generous pinch grated, organic Lemon peel
- salt
- freshly grated Nutmeg
- 1 l clear Beef broth

Preparation steps

For the marrow dumplings, heat the beef marrow in a pot over low heat and let melt. Pass the melted marrow through a sieve and stir the strained marrow with a whisk until foamy. Add the eggs, breadcrumbs, parsley and lemon zest, and season with salt and nutmeg. Let rest for about 30 minutes.

Make small dumplings from the mixture and drop into slightly boiling beef broth. Simmer for about 15 minutes until done.
