- 500 grams Beef (stew meat)
- 1 bay leaf
- 3 allspice
- 2 peppercorns
- salt
- 300 grams small, waxy potatoes
- 300 grams Broad bean (removed from the pod)
- 150 grams small, thin carrots
- 150 grams small shallots
- ½ bunch mint

Preparation steps
1.
Rinse the meat and pat dry. Bring to a boil with the spices and 1.5 liters (approximately 6 cups) water. Season with salt. Simmer for about 1 hour over medium heat. Skim any foam.

Meanwhile, scrub the potatoes thoroughly and parboil for 10 minutes in boiling salted water. Drain.

Rinse and peel the fava beans. Peel the carrots and shallots and chop. Rinse the mint, shake dry and pluck the leaves from the stems.

Remove the meat from the soup and cut into bite-sized pieces.
5.
Strain the stock into a new pot. Bring to a boil, add the potatoes, beans, carrots and onions, season with salt and pepper and simmer for about 15 minutes over medium heat. Adjust the seasoning, add the mint and meat and mix to combine. Serve.
