- 2 ⅔ cups Pork tenderloin (trimmed of excess fat and cut into 16 pieces)
- 16 Apricot (halved and stoned)
- 16 wooden Skewer (soaked in water for 30 minutes)
- ⅜ cup olive oil
- ¾ cup Arugula
- ¾ cup baby Spinach
- 1 Tbsp mint (cut 'chiffonade')

Preparation steps
1.
Heat the coals on a barbecue until they start to turn white.
2.
Thread the pork chunks and apricot halves onto the skewers, then brush with olive oil.
3.
Season well and grill on the barbecue for 12-15 minutes, turning occasionally, until the pork is golden and lightly charred.
4.
Remove and serve on plates with a little rocket, baby spinach and a sprinkle of mint.
