- Ingredients
- 16 ozs fresh Cod (skin removed)
- 2 Tbsps freshly squeezed Lime juice
- ¼ cup all-purpose flour
- 2 Tbsps yellow Cornmeal
- 1 Tbsp Chili powder
- 1 tsp dried oregano
- 1 tsp Cumin
- ½ tsp salt
- Canola oil (for frying)
- 8 Corn tortilla (warmed)
- 1 cup prepared Guacamole
- 4 fresh Radish (cleaned; trimmed and thinly sliced)
Preparation steps
1.
Rinse the fillets under cold running water and pat completely dry with paper towels. Cut the fillets into strips. Place the fish in a shallow dish and drizzle with lime juice; allow to stand for 10 minutes.
2.
In a separate shallow dish or pie plate, combine flour, cornmeal, chili powder, oregano, cumin and salt.
3.
In a large heavy skillet, heat the canola oil to a depth of 1/2-inch, over medium-high heat until very hot.
4.
Working in batches, dredge the cod fillets in the flour mixture and fry until cooked through and golden brown, about 7 to 10 minutes; drain on absorbent paper towels and keep warm.
5.
Serve in tortillas with guacamole and sliced radishes.
