- For the celery
- 8 sticks Celery (cut in 7cm|3" pieces)
- Celery salt

- 1 cup all-purpose flour (plus extra for dusting)
- 2 tsps Baking powder
- ¼ tsp salt
- 1 egg
- ⅔ cup milk
- Oil (for deep frying)
- For the herb mayonnaise
- 2 egg yolks
- 1 Tbsp Dijon mustard
- 1 ⅓ cups olive oil
- ½ tsp lemon juice
- 1 Tbsp chopped parsley
- 1 tsp chopped Chives
- 1 tsp chopped Chervil

Preparation steps
1.
Toss the celery in celery salt and pepper, then in a little flour.

Sift the flour and baking powder into a mixing bowl and stir in the salt. Make a well in the centre and gradually beat in the egg and milk to form a thick coating batter.

Heat the oil in a large pan.

Dip the celery pieces in the batter and fry in batches until crisp and golden. Drain on absorbent kitchen paper.

For the chips: heat the oil in a large pan and cook the chips for 1-2 minutes until softened but still pale. Remove from the oil, drain and cool slightly.

Reheat the oil until very hot. Cook the chips until golden brown and crisp. Drain on absorbent kitchen paper.
7.
For the herb mayonnaise: put the egg yolks and mustard into a food processor or blender. Blend into a paste and very slowly drizzle in the olive oil to make a thick mayonnaise-like sauce.
8.
Add the lemon juice and herbs and season to taste with salt and pepper. Spoon into a serving bowl.
9.
Serve the celery and chips with the herb mayonnaise and garnish with lemon.
