- For the pesto
- 1 ½ cups Basil
- ¼ cup Pine nuts
- 1 clove garlic cloves (crushed)
- 1 Tbsp lemon juice
- 2 Tbsps Nutritional yeast (or powder)
- 2 Tbsps extra virgin olive oil
- 2 Tbsps hot water
- For the pasta
- 7 cups Penne
- 1 head Broccoli (prepared into florets)
- 2 Tbsps olive oil
- 4 cups button Mushrooms (quartered halved)
- salt
- freshly ground peppers

Preparation steps
1.
For the pesto: Combine the basil leaves, pine nuts, garlic, lemon juice, yeast, olive oil, and water in a food processor or blender. Pulse until smooth and then season to taste with salt and pepper.

For the pasta: Cook the pasta in a large saucepan of salted, boiling water until 'al dente; ' 8 - 10 minutes.

Add the broccoli to the pasta after 5 minutes of cooking. Drain the pasta and broccoli and briefly run under cold water.

Heat the olive oil in a large saute pan set over a moderate heat until hot. Add the mushrooms and a pinch of seasoning, sautéing for 6 - 7 minutes until tender.

Add the broccoli, penne, and pesto, stirring well. Cook for 2 minutes until warmed through and then adjust the seasoning to taste.
6.
Spoon into bowls and serve right away.
