- For the tomatoes
- 1 Tbsp fresh rosemary
- 2 Tbsps fresh thyme
- 1 Tbsp fresh oregano
- 4 Tomatoes
- 1 garlic clove
- 1 Tbsp olive oil
- 2 tsps sugar
- salt

Preparation steps

Line baking sheet with parchment paper.

For the tomatoes: rinse herbs and chop finely.

Rinse tomatoes, cut in half crosswise and remove seeds. Arrange tomatoes on a baking sheet, cut side up. Peel garlic adn squeeze through a garlic press. Combine garlic with olive oil, season with salt and pepper and drizzle over tomatoes. Bake in preheated oven at 100°C (approximately 200°F) for about 1-2 hours.

For the omelet: whisk eggs with cream, season with salt and pepper. Heat oil in a nonstick skillet, add half of basil leaves and pour eggs over. Cook for 2-4 minutes on low heat. Remove from heat and fold, let stand for 1 minute. Arrange with tomatoes on plate and garnish with fresh basil leaves. Serve.
