This omelet is packed with protein from the bacon and the antioxidant lycopene from the tomatoes.

Replace the bacon with turkey bacon for less fat.

8 Cherry tomatoes
1 Red chili pepper
2 pcs thinly sliced Bacon
5 eggs
3 ozs lactose-free, lowfat milk
salt

4 ozs Comté cheese
2 tsps butter
1 handful Basil

Preparation steps

1.

Rinse and halve the tomatoes. Rinse the chile pepper, cut in half, remove seeds and cut into very thin strips. Cut the bacon into approximately 1/4-inch wide strips. Mix the egg and milk together and season with salt and pepper. Pat dry the cheese and cut into cubes.

2.

Brown half of the bacon in a pan and add 1 teaspoon butter. Pour half of the egg mixture over it and, while it is still soft, add half of tomato and chile pepper strips. Sprinkle with half the amount of cheese and basil and let the egg set.

3.

Slide the omelet onto a plate and serve.

4.

Repeat the process to a make a second omelet.
