Baked Pumpkin Soup
Cut pumpkin into 2 cm (approximately 3/4 inch) cubes. Peel garlic and chop finely. Peel onions and cut into small cubes.
Mix pumpkin, garlic, onions, pumpkin seeds, rosemary and olive oil and spread on a baking sheet. Bake in a preheated oven (180°C/approximately 350°F) until golden brown, about 45 minutes, stirring every 10 minutes. Then transfer to a pot and mash roughly. Stir in the broth and slowly bring to a simmer, adding broth as needed. Cook another 5 minutes. Season with salt and pepper and serve sprinkled with crumbled feta cheese.
