- 8 waxy potatoes
- vegetable oil (for brushing)
- 1 bunch Basil
- 1 peeled garlic clove
- 2 Tbsps toasted Pine nuts
- 3 Tbsps freshly grated Parmesan
- 60 milliliters olive oil
- salt

Preparation steps
1.
Peel and rinse potatoes. Cut each potato crosswise 5-6 times, making sure that cuts do not go all the way through. Wrap each potato into slightly oiled piece of aluminum foil and bake in preheated oven at 200°C (approximately 400°F) for about 40 minutes.

Rinse basil, shake dry and pluck off leaves. Puree basil together with crushed garlic, pine nuts and oil with an immersion blender and add Parmesan. Season with salt and pepper.
3.
Remove potatoes from oven and unwrap. Cool slightly and transfer to slightly greased baking dish. Fill potato cuts with pesto and bake for 8-10 more minutes in the oven. Serve.
