4 large yellow onion
1 carrot (finely grated)
4 Tbsps butter
250 grams mixed Ground meat

Preparation steps

1.

Peel the onions and blanch in lightly salted water for about 10-15 minutes. Remove and drain. Cut a lid from the top of the onions and scoop out the inside with a small spoon.

Finely chop half of the onion flesh. Melt 2 tablespoons of the butter and fry the chopped onion. Add the grated carrot and ground meat and sauté. Season with salt and pepper and remove from the heat. Stir in the cream, dill and chopped anchovies.

3.

Spoon the mixture into the hollowed onions and place in a greased baking dish. Pour in the vegetable broth and cook on the middle rack of a preheated oven at 180°C (approximately 350°F), about 30 minutes. Arrange on plates and serve immediately.
