Preparation steps

The rice should be sticky and easily formable. Mix the rice with the chopped parsley in a bowl. Season with salt and pepper. Take a ball of rice and roll it into an oval shape. Form 4 bodies for the mouse.

Mix the tempura batter according to instructions on the packet. Dip each mouse in the batter until evenly coated, then fry in hot oil at 350°F (175°C) for about 8 - 10 minutes until golden brown. Make tails for each mouse by dripping some of the tempura batter in the hot oil. Drain the mice and the tails on paper towels. Decorate the mouse using the carrot slices as ears, the juniper berries as noses and the peppercorns as eyes. Give each mouse a tail and serve with a slice of cheese.
